Investigation of Turkish Drinks in Terms of Gastronomy Tourism

Abstract

Gastronomy tourism is a type of tourism which food, beverage and culture are presented as products. It provides the opportunity to experience local products, foods, and beverages such as wine. In this context, national products which reflecting the history and culture of a nation are of great importance for this type of tourism. Therefore, the aim of this study is to investigate the Turkish’s Ancestor spirits and gained them to Turkey gastronomy. In order to reach the aim of the study, documentary scanning method which is one of the qualitative research methods has been used. As a result of the examinations were determined that koumiss which is done with raw mare’s milk tarasun which is done by mixing millet wine and koumiss. In addition, it was seen that Turks produced various drinks called barley begni and camum and ugut from the wheat. However, other drinks mentioned in the sources very rarely are identified as medus and lo.

Özet

Gastronomi turizmi; yiyecek, içecek ve kültürün ürün olarak sunulduğu bir turizm türüdür. Yerel ürünleri, yiyecekleri, şarap gibi içecekleri tecrübe etme imkanı sağlamaktadır. Bu kapsamda bir ulusun tarihini ve kültürünü yansıtan milli ürünler, söz konusu turizm türü için büyük önem taşımaktadır. Bu çalışmanın amacı, Türklere özgü içkileri araştırmak ve gastronomi turizmi açısından incelenmesini sağlamaktır. Çalışma amacına ulaşabilmek için veri toplama yöntemi olarak nitel araştırma yöntemlerinden belgesel tarama (doküman inceleme) yönteminden faydalanılmıştır. Yapılan araştırmalar sonucunda Türklere özgü başlıca içkilerin; çiğ kısrak sütünden üretilen kımız ve darıdan şarap yapılarak kımızın karıştırılmasıyla elde edilen tarasun olduğu tespit edilmiştir. Ayrıca Türklerin arpadan begni ve camum, buğdaydan ise uğut adında çeşitli içkiler üreterek tükettikleri görülmüştür. Bununla birlikte kaynaklarda adından çok nadir söz edilen diğer içkiler ise medus ve lo olarak belirlenmiştir.
