Abstract
The sudy was carried out for the determination rit the chemical composition of turkish type fermented spicy sausages sold in Adana and the control of them wheather they have equine meat Of not- The above pointed out research has been accomplished on 102 : samples for the period of Oct. 1975 ;" J un 1976. The samples were tested organoleptically; physically; · chemically ·and seerologically.
