A research on the feeding value of Tarhana which constitutes a national diet

Abstract
İn this study we made investigatio for the bacteria an what is the feeding value of Turkish tarhana.Chemical examination :1- Water:We examined 55 tarhana samples (we used xylen distilatin methode)I sample % 1,3 water, 10 samples (% 18) % 5 - 6 water, 10samples (% 18) .% 7 water, 10 samples (% 18) %8 water, 11 samples (% 20) % 9 water, 2 samles % 10 water, 1 sample % 11 watercontained.% 10 andl sample % 11water: (we used xylen distilation methode).2- Protein :We used kjeldahl methode total nitrogen % 5,69 - 27,6.3- Fat:We used Soxlet Henkel methode. % 0,2 - 18.4 - Total Ash :The ingnition is made in the muffle furnace degree 600, 650°C% de total ash % 1 - 14,2.5 -Salt :We dilueted ash with the water and after filtered and titrated with the AgN 0a. % 0 - 11,7 salt contain.6- Acidity:We used H2SO4 the acidity are % 0,294 - 2,3716.Bacteriolojical examination :Total jerm :We examined 55 Turkish tarhana sample for the total jerm 38samples contain from 150 to 500 total jerm. 4 samples (% 7) 200 -1000 total· jerm. 5 samples (% 7) 1000 - 2000, 5 saples. (% 7)2000- 4500.COLİFORM BACTERİA :We did not find coliform bacteria in Turkish tarhana.

Memleketimizin muhtelif illerinden toplanarak getirilen tarhananümuneleri üzerinde yapılan kimyevi ve bakteriolojik araştırmaneticesİnde elde edilen sonuçlar cetvelde gösterilmiştir.KİMYEVİ ARAŞTIRMA :Çalışılan 55 nümuneden herbiri üzerinde yapılan tahlil neticesinde:1- Su:55 nümunenin 1 inde % 1,3 su ve 10 nümunede (% 18 inde)% 5- 6 su 10nümunede (% 18 inde) %7 su, 10 nümunede (% 18 inde) % 8 su ve 11 nümunede (% 20 sinde) % 9 su, 2 nümunede % 1.0su, 1 nümunede % 11 su ihtiva: etmektedir.2 -Protein :Kjeldahl metodu ile total azot miktan % 5,69 - 27,6 arasında tesbit edilmiştir.3- Yağ:Soxlet Henkel metodu ile yapılan muayenede % 0,2 - ile % 18 arasında bulunmuştur.4 - Total Kül :55 nümunede kül nlsbeti % 1 - 14,2 olarak bulunmuştur.5-Tuz:Tuz miktarı %0 ile 11,7 arasında değişmektedir.6- Asitlite :H2SO4cinsinden 0,294 ile 2,3716 arasında değişiklik göstermektedir.BAKTERİOLOJİK MUAYENEBakteriolojik muayenede total jerm bakımından kontrolde 1 gram tarhanada en az 150 ila 4500 jerm tesbit edildi. Koliform bakterilerüretilmemiştir. Bu çalışmalara ait neticeler cetvelde gösterilmiştir.
