Abstract

Yoghurt is fermented milk production that is of economic importance worldwide because of its high nutrient content. It contain microorganisms such as S. thermophilus and Lb. delbrueckii subsp. bulgaricus that providing beneficial effects on the intestinal microbiota. It is also seen as a good carrier of taking probiotic microorganisms into the body. They increase their functions in the intestinal flora when used with yoğurt bacteria. They show positive activities such as regulating body systems and reducing the effects of different diseases. Synbiotic product is obtained by adding ingredients with prebiotic effect to probiotic yoghurts. Plants with high fiber content, nutrient value, vitamin C and carotene content, such as pumpkin, are used for this purpose. C. pepo, C. moschata, C. maxima, C. stilbo ve C. mixta are the most commonly used pumpkin species. They offer alternatives to the development of new functional products by adding probiotic yoghurt varieties and different foods. It would be beneficial to expand the studies in which pumpkin and probiotic yoghurts are used together, and to carry out more detailed studies to obtain new functional products.
