Abstract

Consumer request must be considered on culture and marketing of animal products. Somephysical factors are considered based on consumer preferences. One of the physical propertiesis colour. Consumers have generally prefered pink-red colored products of fish and pay morecost. Althought colour of fish flesh has no affect on flovor, it is an important quality criteria forconsumer. The desired colour in flesh and skin of aquatic organism is obtained by the pigmentmaterials known as carotenoids. Carotenoids can be synthesized only plants, alg, some fungusand bacterium spp. Carotenoids are the major pigmenting compounds and can not typcially besynthesized by fish; therefore it must be suplemented by synthetic or natural carotenoid sourcesto the fish feed. However addition of carotenoids to fish feeds increase the cost of fish feedabout 20-25 %. Therefore the use of native carotenoid sources for fish pigmentation. In thisrewiew, the use of natural carotenoid sources are summerized for fish feed in aquaculture.
