Abstract

The present study was undertaken to determine quality of the fresh horse mackerel marketed in Elazığ. A total of 30 fish samples were collected from local fish markets in different periods. The samples were analysed for numbers total aerobic microorganisms (at incubation temperatures of 5, 20, and 35 C°), for numbers of total coliforms, for numbers of Staphylococci-Micrococci for presence of Escherichia coli type 1 and Staphylococcus aureus. In addition, levels of TMA-N in samples were determined. Results indicated that the mean numbers of total aerobes determined at incubation temperatures of 5, 20, and 35 C° 3.50+2.57 $log_{10}$ cfu/cm2, 5.92±0,71 $log_{10}$ cfu/cm2 ve 4.91±0,79 logio .cfu/cm2 respectively. The mean numbers of total coliforms and Staphylococci-Micrococci were found as 4.01±1.75 $log_{10}$ cfu/cm2, and 3.90±0.57 $log_{10}$ cfu/cm2, respectively. No Escherichia coli type 1 and no Staphylococcus aureus was detected in fish samples. Levels of TMA-N in the samples were found varying between 1.13-32.00 mg per 100 g (mean 8.54±9.06 mg per 100g) of fish samples. A moderate correlation was determined between levels of TMA-N and numbers of aerobic microorganisms growth at incubation temperatures of 5, 20 and 35 C° r= 0.60, r= 0.39 and r= 0.29 respectively, and between TMA-N of levels and numbers of coliforms r=0.55,and between TMA-N levels of samples and numbers of Staphylococci-Micrococci r=- 0.22. Results of this study revealed that the fresh" horse mackerel fish marketed may present health risks to consumers due to unacceptable TMA-N levels determined in some fish samples analysed.
