Abstract

Phenolic substances are powerful antioxidants with health effects that reduce the risk of diseases such as cancer, heart disease and diabetes. Within the scope of waste assessment, which is an important issue for the country's economy and environmental pollution, it is possible to obtain phenolics rich extracts from the skins of the hazelnut and Antep pistachio removed in the food industry, which are very valuable products, and to be converted into different products with added value. However, these phenolic substances have low stability, low solubility and poor bioavailability and high ability to interact with other food substances. Hence, it is recommended to encapsulate phenolics using appropriate methods to eliminate these properties. At this point, liposomes are suitable delivery systems for phenolic substances. In this study, primary (non-chitosan coated) liposomes were first produced using a high pressure homogenizer. Afterwards, the kinetic stability of the primary liposomes was enhanced by layer-by-layer method with 0.4% chitosan solution to obtain secondary liposomes (covered with chitosan). The primary and secondary liposomes obtained were characterized by measuring particle size and zeta potentials. Accordingly, while the particle size of the primary liposomes was 146 nm, the particle size increased with the increasing extract concentration. It was observed that the liposomes' electrical charge changed from negative to positive when coated with chitosan. Coating with chitosan also increased the particle size. Considering the encapsulation efficiency, it was understood that the highest yield was obtained at a concentration of 0.1% for both extracts. The encapsulation efficiency at this concentration was 79% for hazelnut skin extract, while this value was 88% for Pistachio skin extract. It was found that the encapsulation efficiency decreased with increasing extract concentration. Our studies are ongoing to add secondary liposomes with increased kinetic stability in the liquid form, especially in food products in the solid form, or to be used as a dietary supplements and to convert these dispersions into powder form to increase their shelf life.
