Ekmek; geliştirilen pek çok gıda maddesine rağmen insan beslenmesindeki yerini ve önemini günümüzde de korumaktadır. Ekmek, üretimi konusunda yapılan çalışmalar yanında ekmeğin kalitesini etkileyen faktörler üzerinde de önemle durulmaktadır. Bu derlemede ekmeğin reolojik özelliklerini belirlemek için yapılan çalışmalar ile geliştirilen alet ve yöntemler tartışılmıştır.
