Hıyar turşularında görülen şişme zararı, genellikle, salamura içerisinde çözünmüş CO2 konsantrasyonuna bağlı olarak artar ve önemli ekonomik kayıplara neden olur. Şişme zararı oluşumunu etkileyen faktörlerden bazıları; salamuradaki mikrobiyal aktivite, yüksek sıcaklık, hıyarın büyüklüğü ve çeşididir. Bu yayında şişme oluşumunun mekanizması açıklanarak, şişme zararının engellenmesi veya en aza indirilmesine yönelik önerilerde bulunulmuştur.
