Abstract

This study was carried out in order to determine whether the artificial sweeteners such as saccharin, cyclamate and aspartame have been added to the foods. We have conducted our study on the samples of jam, marmalade, fruit juice, soft drinks, sesame halvah, baklava (sweet pastry) which are produced by 21 different firms and sold in the local markets of Ankara. Totally 300 samples have been analysed with regard to the sweeteners. But in none of these samples, the content of cyclamate and saccharin has been found. The average amounts of aspartame which was used in soft drinks were determined between the rates of 219.97 7.07 and 560.16 8.53 mg/l However it is observed that the average amount of aspartame used in the non-dietary soft drinks was at the level of nearly 41.76 3.58 mg/l.

Özet

Bu araştırma, gıdalara yapay tatlandırıcılardan sakkarin, siklamat ve aspartamın katılıp katılmadığının saptanması amacıyla yapılmıştır. Araştırmada, Ankara piyasasında satılan 21 firmaya ait, reçel, marmelat, meyve suyu, gazlı alkolsüz içecek, tahin helvası ve değişik pastanelerden alınan baklava örnekleri üzerinde çalışılmıştır. Toplam 300 örnek incelemeye alınmıştır. Örneklerin hiç birinde sakarin ve siklamat saptanmamıştır. Alkolsüz gazlı diyet içeceklerde ortalama aspartam miktarı, 219.977 7.07 mg/l-560.16 8.53 mg/l olarak bulunmuştur. Diyet olmayan alkolsüz gazlı bir tip içecekte ise, ortalama aspartam miktarı 41.76 3.58 mg/l’dir. Alkolsüz gazlı diyet içeceklerde kullanılan aspartam miktarları ortalaması, Gıda Katkı Maddeleri Yönetmeliğini aşmamaktadır. Ancak iki tip üründe etikette belirtilen miktarlarda aspartam bulunurken, 2 tip içecekte etiket değeri üzerinde (p<0.05) aspartam kullanıldığı saptanmıştır.
