Kserotolerant mayalar, orta nemli gıdalar olarak tanımlanan ürünlerde yaygın olarak bulunan mikrobiyal kontaminantlardır. Gıdalarda neden oldukları bozulmalar ile ekonomik kayıplara yol açmalarının yanı sıra, bazı üyelerinin oluşturdukları sağlık problemleri de son yıllarda önem kazanmıştır. Bu derlemede, yüksek şeker içerikli gıdalarda kserotolerant mayaların önemi üzerinde durulmuştur.
