Abstract

As of 2018, beef constitutes 89.73% (1.003.859 ton) of the total red meat production in Turkey. Fattening material and feed costs are the most important cost factors in cattle fattening. Due to the increasing population and demand level in recent years, the gap of red meat supply in the market has led to the importation of slaughtering-fattening animal and carcass meat. In the 3 year period between 2016 and 2018, slaughtering and fattening cattle imports have realized as 257.131 heads and 1.972.224 heads respectively. The value of this import is calculated as 2.448.225.330 USD (9.044.379.646 Turkish Lira). In the recent period, a destructive competitive environment and price pressure have emerged on producers, based on the increased production costs and customs duty advantages on the imported cattle for slaughter and beef. On the other hand, profitability levels of cattle fattening enterprises have decreased and sectoral sustainability was adversely affected. In the last two years, approximately 20,000 cattle fattening enterprises have been closed or halted. Throughout in Turkey, 264.230 cattle fattening enterprises are available in total. 64,02% of these enterprises are small scale enterprises with less than 10 animals. In cattle breeding, the share of enterprises with 50 and overheads are only 5,07% in total enterprises. However, these enterprises which are classified as large-scale have 38,41% of total beef cattle inventory with 1.532.564 heads. The main cost factors affecting the production costs of cattle fattening are the duration of fattening, the origin of the animal, the yield characteristics of the breed used, daily live weight gain, the feed ration content, the change in raw feed prices, the currency exchange rate fluctuations, the fattening performance and the carcass yield, the periodic amount of the inputs, diseases and mortality rates. Particularly supplying feed and cattle material in favourable prices and good quality, taking due precautions in order to provide cost minimization in cattle fattening enterprises, to provide support based on the scale classifications and proper market conditions for the profitable activities in optimum scale, to increase the margin transferred to the producer through retail meat sale prices and reduce the number of intermediaries in the marketing chain and providing more affordable meat price for the consumer is crucial in line with the sustainability of production in the sector.
