Abstract

This study was carried out in order to determine some mineral substances and heavy metal levels in Divle tulum cheese which is one of the traditional Turkish cheeses. A total of 20 mature cheese samples, which are presented for sale after being produced in the Divle village (Ayrancı-Karaman), were brought to the laboratory in the cold chain with their original packages. Samples were prepared in the microwave sample preparation system (CEM, Mars-5, USA). When Zeeman Atomic Absorption Device (Varian/Spektra AA280Z/Graphite Tube Atomizer, Holland) was used in the determination of lead (Pb), cadmium (Cd) and phosphorus (P), Flame Atomic Absorption Device (Varian/Spektra AA280FS, Holland) was used to detect arsenic (As), mercury (Hg), copper (Cu), iron (Fe), zinc (Zn), calcium (Ca), magnesium (Mg), aluminium (Al), potassium (K), tin (Sn) and nickel (Ni) levels. The mean levels of lead (Pb), cadmium (Cd), arsenic (As), mercury (Hg), copper (Cu), iron (Fe), zinc (Zn), calcium (Ca) , phosphorus (P), magnesium (Mg), aluminium (Al), potassium (K), tin (Sn) and nickel (Ni) were 0.026±0.019 (n:11), 0.020±0.013 (n:7), 0.068±0.039 (n:16), 0.009±0.007 (n:8), 0.201±0.129 (n:2), 10.892±3,835 (n:14), 21.699±8.697 (n:16), 6333.96±748.829 (n:20), 4802.260±552,841 (n:20), 203.762±68,485 (n:20), 0.513±0.358 (n:3), 1153.230±176.638 (n:20), 0.061±0.010 (n:10) and 0.167±0.149 (n:7) mg/kg respectively. Mineral substance levels of the samples showed that this cheese was an important dairy product in terms of nutrition. The heavy metal levels in the samples examined did not exceed the limits defined by national and international standards. It is thought that the low level of heavy metal pollution in cheese samples may be due to the low level of heavy metal contamination in the production area. As a result, it has been concluded that the consumption of Divle tulum cheese does not pose a significant risk to public health due to heavy metal pollution and may contribute significantly to human nutrition with mineral substances in its composition.

Özet

Bu çalışma, geleneksel Türk peynirlerinden Divle tulum peynirinde bazı mineral madde ve ağır metal düzeylerinin belirlenmesi amacıyla yapılmıştır. Divle köyünde (Ayrancı-Karaman) üretildikten sonra satışa sunulan olgunlaşmış toplam 20 adet örnek orijinal ambalajlarıyla soğuk zincirde laboratuvara getirilmiştir. Örnekler mikrodalga örnek hazırlama sisteminde (CEM, Mars-5, USA) analize hazırlanmıştır. Örneklerde kurşun (Pb), kadmiyum (Cd) ve fosfor (P) düzeylerinin tespitinde Zeeman Atomik Absorbsiyon Spektrofotometre (Varian/Spektra AA280Z/Graphite Tube Atomizer, Holland) kullanılırken, arsenik (As), civa (Hg), bakır (Cu), demir (Fe), çinko (Zn), kalsiyum (Ca), magnezyum (Mg), alüminyum (Al), potasyum (K), kalay (Sn) ve nikel (Ni) düzeylerinin tespitinde ise Alevli Atomik Absorbsiyon Spektrofotometre (Varian/Spektra AA280FS, Holland) kullanılmıştır. Yapılan analizlerde tespit limitlerinin üzerinde element içeren örneklerden elde edilen ortalama kurşun (Pb), kadmiyum (Cd), arsenik (As), civa (Hg), bakır (Cu), demir (Fe), çinko (Zn), kalsiyum (Ca), fosfor (P), magnezyum (Mg), alüminyum (Al), potasyum (K), kalay (Sn) ve nikel (Ni) düzeyleri sırasıyla 0.026±0.019 (n:11), 0.020±0.013 (n:7), 0.068±0.039 (n:16), 0.009±0.007 (n:8), 0.201±0.129 (n:2), 10.892±3.835 (n:14), 21.699±8.697 (n:16), 6333.96±748.829 (n:20), 4802.260±552.841 (n:20), 203.762±68.485 (n:20), 0.513±0.358 (n:3), 1153.230±176.638 (n:20), 0.061±0.010 (n:10) ve 0.167±0.149 (n:7) mg/kg olarak belirlenmiştir.
