Abstract
Our country which is on third position at production of pistachio after Iran and USA recently has been close follow-up of Syria and China. According to 2013 data in our country from 38.116 thousand of fructiferous trees, 88.6 thousand tons of pistachio is produced. Like for a lot of fruit species, our country is also one of the origin centers for pistachio. Although pistachio production has been farmed in 56 provinces in our country, it has been economically performed in Gaziantep, Şanlıurfa, Siirt, Adıyaman ve Kahramanmaraş provinces. Thus, according to 2013 data while 95.62% of pistachio mass orchard areas and the trees at the age of furiciferous exist in these provinces, 82.44% of the total production is provided by these provinces. Whereas pistachio usually is consumed as appetizer, unshelled pistachio is used as ingredient in chocolate, ice cream and some kind of dessert foodstuffs. Dünya Antepfıstığı üretiminde İran ve ABD’nden sonra üçüncü sırada yer alan ülkemiz, son yıllarda Suriye ve Çin’in yakın takibinde bulunmaktadır. Ülkemizde 2013 verilerine göre 38.116 bin meyve veren ağaçtan 88.6 bin ton Antep fıstığı üretilmektedir. Birçok meyve türünde olduğu gibi ülkemiz, Antep fıstığının da gen merkezlerinden biridir. Ülkemizin 56 ilinde Antepfıstığı yetiştiriciliği yapılmasına rağmen, ekonomik olarak yetiştiricilik Gaziantep, Şanlıurfa, Siirt, Adıyaman ve Kahramanmaraş illerinde yapılmaktadır. Nitekim 2013 yılı verilerine göre Antep fıstığı toplu meyvelik alanlarının % 95.62’si ve meyve veren yaştaki ağaçların % 91.15’i bu illerde bulunurken, yine toplam üretimin % 82.44’ünü bu iller karşılamaktadır. Bu çalışmayla yıldan yıla değişmekle beraber ülkemizden ihraç edilen tarım ürünleri arasındaki önemi koruyan bu ürün üretiminden, pazarlamasına kadar incelenerek ve değerlendirilmiştir.
