Abstract

Knife is a tool, consisting of a handle and a cutter, used for cutting or chopping depending on its features. The safe use of knives, as one of the basic preparation tools in the kitchen, is possible with sufficient experience and knowledge. It is possible to prevent accidents and various injuries that may occur when knives are not used safely within sufficient knowledge. In the study in which the knife knowledge levels and knife preferences of the students of Gastronomy and Culinary Arts Department were evaluated, a questionnaire consisting of twenty-three questions including demographic questions as well as questions about knife selection and safe knife usage was applied to 251 participants. The obtained data were analyzed by using the SPSS 18.0 statistical package program. Number, percentage, mean and standard deviation were used as descriptive statistical methods in the evaluation of the data. As a result of this research which examined the knowledge levels of the students of the department of gastronomy and culinary arts, it was revealed that the students' level of knowledge should be increased for occupational safety and safe knife use, and chef knife preferences.
