Abstract

People seek diverse experiences in their daily lives, and food experiences are among the most common. Street food holds a significant place among these experiences due to its affordability and quick preparation. The variety seeking, neophilia, and neophobia are influential factors in the consumption of street food. Therefore, the main purpose of this research is to determine the mediating role of variety seeking on the effect of neophobia and neophilia on attitudes towards street food. Correlational model from quantitative research methods used in this research. Data was collected from the sample using a questionnaire. The questionnaire was prepared using Google Forms and the link was distributed to participants via social media. Convenience sampling was used in the research. 357 people participated in the study. SPSS and SmartPLS programs were used for data analysis. Frequency analysis was performed to determine the demographic characteristics of the participants. The model created was then tested using the SmartPLS program. According to the research results, neophilia and the variety seeking were found to have an effect on all dimensions of attitudes towards street food. Neophobia, however, was found to have an effect on only two dimensions. The study examined the mediating effect of diversity seeking on the dimensions of street food attitudes related to neophobia and neophilia. It found that variety seeking had no mediating effect on neophobia's influence on street food attitudes. However, when examining the mediating effect of variety seeking on neophilia's influence on street food attitudes, a partial mediating effect was observed.
