Abstract

The objective of this study is to determine quality changes of minimally processed pomegranate arils cv. Katırbaşı during cold storage. The aril of pomegranate fruits cv. ‘Katırbaşı’ were manually extracted and packaged into 250 g of unperforated commercial clamshells and kept at 5 °C for 18 days. Weight loss, aril color, juice color, total soluble solid (TSS), titratable acidity (TA), juice pH, incidence of physiological disorders and fungal decay were assessed during storage. Sensory evaluation (eating and visual quality) was also performed at a 3-day interval during storage. Weight loss, juice pH, absorbance@446 of juice, aril color b* value increased while TSS content, TA, aril color L* value, and taste and overall visual quality scores decreased during storage. Absorbance@510 of juice, aril color a* and C* values increased until 9 days of storage, and then decreased after 12 days of storage. Aril color h° value decreased until 9 days of storage and then increased after 12 days of storage. Incidence of fungal decay was not observed during storage. Loss of aril color and visible shriveling symptoms occurred after 12 days of storage and drip leakage after 15 days of storage. Minimally processed pomegranate arils cv. ‘Katırbaşı’ could be kept into unperforated commercial clamshells at 5 °C for 12 days without quality deterioration.
