Abstract

Organosulfur compounds are bioactive molecules containing sulphur atoms in their structures and showing antioxidant, anti-inflammatory, antimicrobial, cardioprotective, antidiabetic, antiobesity and neuroprotective, especially anticarcinogenic effects. The aim of this review is to comprehensively evaluate the chemical properties, biological activities, health effects, and bioavailability of organosulfur compounds in line with the current literature. These compounds have been shown to influence anti-cancer mechanisms such as regulation of the cell cycle, prevention of metastasis, induction of apoptosis, and inhibition of angiogenesis. In addition, various studies have shown that they play important roles in various physiological processes, such as combating oxidative stress, supporting cellular detoxification processes, strengthening the immune system, and reducing the risk of cardiovascular disease. Although organosulfur compounds are particularly high in vegetables such as garlic, onion, leek, broccoli, cabbage, and cauliflower, their bioavailability is significantly affected by processing methods such as cutting, crushing, chewing, or cooking. Therefore, further clinical research is needed to determine appropriate preparation and cooking methods to enhance the bioavailability of the relevant compounds and to better understand their health effects.
