Özet
Araştırma Mart 1984 tarihinde Ankara il sınırları içinde bulunan Maden Tetkik ve Araştırma Enstitüsünde (M.T.A.) yemek yiyen 193 memur ve 107 işçi olmak üzere toplam 300 kişi üzerinde yapılmıştır. Kuruma günde 630 kg ekmek alınmaktadır. Bu ekmeğin personele servis edilemeden artan miktarı günde ortalama %11.1 olarak bulunmuştur.
