Beslenme ve sağlık birbirinden ayrı düşünülmeyen iki kavramdır. Epidemiyolojik çalışmalar kanser ile beslenme arasında yakın bir ilişkinin olduğunu göstermektedir. Bu çalışmada çeşitli gıda maddelerinde bulunan polisiklik aromatik hidrokarbonların oluşumları ve sağlık riskleri açıklanmaktadır.
