Covid-19 Pandemisi’nin Yiyecek İçecek İşletmelerine Etkileri: İstanbul Beyoğlu Örneği

Özet
COVID-19 pandemi süreci ile yaşantımızın her alanında değişiklikler olmuştur. Sosyal mesafe, temassız işlemler, sağlık, hijyen ve daha birçok kavram sık kullanılır olmuş, dijital çağın gereklilikleri olarak yeni uygulamalar eğitim, sağlık, perakende gibi pek çok alanda kendini göstermiştir. Çalışmada, yiyecek içecek işletmeleri sahiplerinin ve çalışanlarının COVID-19 pandemi sürecinde karşı karşıya kaldıkları sorunların tespit edilmesi bu sorunlara çözümler önerilmesi amaçlanmıştır. Çalışmada nicel araştırma yöntemleri kullanılmıştır. Anketler Mayıs- Ağustos 2021 tarihleri arasında katılımcılara uygulanmıştır. Çalışmanın, tam kapanma dönemine rastlaması ve birçok yiyecek içecek işletmelerinin kapalı olmaları sebebiyle 226 birim katılımcıya çevrim içi olarak ulaşılabilmiştir. İstanbul Beyoğlu’nda faaliyet gösteren yiyecek içecek işletmeleri sahipleri ve çalışanlarından elde edilen veriler normal dağılım göstermediği için Kruskal Wallis Testi uygulanmıştır. Çalışmadan elde edilen bulgulara istinaden, katılımcıların pandemi sürecinde sosyal ekonomik, psikolojik yönden yiyecek içecek işletmeleri çalışanları ve işletme sahipleri arasındaki etkileşimin azaldığı, işletmelerin satış hacimlerindeki düşüşlerin, maddi kayıpların olumsuz yönde etkilendikleri belirtilmiştir. Bu dönemde çalışanlar işlerinden çıkarılmış, çalışma süreleri kısaltılmış ya da uzaktan çalışmaya geçilmiştir. Çalışmaya devam edenler ise ekonomik gerilemeden dolayı işlerini kaybetme korkusu yaşamışlardır. Hükümet, alınan tedbirlerle çalışanlara ve işletme sahiplerine ek destekler sunmuştur fakat katılımcıların verdikleri cevaplara göre hükümet tarafından alınan tedbirler yeterli bulunmamıştır. Katılımcılar bu süreçte sosyal hayatlarındaki daralmanın kendilerini olumsuz yönde etkilediğini belirtmişlerdir.
Abstract
With the COVID-19 pandemic process, there have been changes in every aspect of our lives. Social distance, contactless transactions, health, hygiene and many other concepts have become frequently used, and new applications as the requirements of the digital age have emerged in many fields such as education, health and retail. In the study, it is aimed to identify the problems that the owners and employees of food and beverage businesses face during the COVID-19 pandemic process and to propose solutions to these problems. Quantitative research methods were used in the study. The questionnaires were applied to the participants between May and August 2021. Since the study coincided with the full closure period and many food and beverage businesses were closed, 226 participants could be reached online. Since the data obtained from the owners and employees of the food and beverage businesses operating in Istanbul Beyoğlu did not show a normal distribution, the Kruskal Wallis Test was applied. Based on the findings obtained from the study, it was stated that the interaction between the employees and business owners of food and beverage businesses decreased in social, economic and psychological aspects during the pandemic process, and the decrease in the sales volumes of the businesses and the financial losses were negatively affected. During this period, employees were dismissed from their jobs, their working hours were shortened or they started working remotely. Those who continued to work experienced fear of losing their jobs due to the economic recession. The government provided additional support to employees and business owners with the measures taken, but according to the answers given by the participants, the measures taken by the government were not sufficient. Participants stated that the recession in their social life affected them negatively in this process.
