Yumurtacı Tavuk Etlerinden Üretilen Köftelerde Koyun Yağı Kullanımının Ürün Kalitesine Etkisi

Özet

Çalışmada yumurta verimi azaldığı için yaklaşık 2 yaşında kesime gönderilen yumurtacı tavuk etlerinden köfte üretilmiş ve üretimde koyun kuyruk yağı ve gömlek yağlarının farklı oranlarda (%0, 10 ve 20) kullanım olanakları araştırılmıştır. Üretilen köfteler pişirildikten sonra vakumla paketlenerek 4±2°C’de 21 gün süresince depolanmış ve depolama boyunca belirli sürelerde (0., 7., 14. ve 21. gün) fiziksel, kimyasal, duyusal ve mikrobiyolojik özellikler açısından incelenmiştir. Köfte örneklerinin depolama süresi boyunca ölçülen ortalama fizikokimyasal değerleri; pişirme kaybı %36.53, pH değeri 6.21, nem içeriği %57.32, protein içeriği %22.68, kül içeriği %2.57, tuz içeriği %1.76 ve TBARS değeri 0.279 mg MA/kg olarak bulunmuştur. Ortalama duyusal genel beğeni puanı ise 5 üzerinden 3.17 olarak tespit edilmiştir. Yağ içeriği en yüksek köfte gruplarının %22.57 ile %20 kuyruk ve %22.58 ile %20 gömlek yağlı gruplar olduğu belirlenmiştir. Köfte örneklerinde toplam aerobik mezofilik bakteri (TAMB) sayısı ortalama olarak 6.17 log kob/g tespit edilmiş olup ürün gruplarının hiçbirinde Salmonella spp. ve Clostridium perfringens varlığı gözlenmemiştir. Yumurtacı tavuk etlerinden üretilen köftelerde farklı koyun yağları hayvan yağı kullanımının, ürünlerin fiziksel, kimyasal ve duyusal özellikleri üzerinde olumlu yönde etkileri olduğu tespit edilmiştir.

Abstract

In this research, meatballs were produced from layer hen meat that were sent for slaughter at the age of 2 and in these products, the possibilities of using animal fats in different proportions (0, 10 and 20%) were studied. The meatball samples were fried, vacuum-packed and stored at 4±2ºC for 21 days, and the physical, chemical, sensory and microbiological properties of meatball products were determined during storage on certain days (day 0, 7, 14 and 21). During storage, average cooking loss was found as 36.53%, pH value as 6.21, moisture content as 57.32%, crude protein content as 22.68%, ash content as 2.57%, salt content as 1.76%, TBARS value as 0.279 mg MA/kg, and overall acceptance score as 3.17 out of 5. The meatball groups, which contained the highest amount of fat, were identified as sheep tail fat group with %22.57 and tallow fat group with %22.58. In meatball samples, the total aerobic mesophilic bacteria count was determined as 6.11 log cfu/g and Salmonella spp. and Clostridium perfringens were not detected in any of the product groups. The use of animal fats in meatballs produced from layer hen meat was found to have positive effects on the physical, chemical and sensory properties of meatball products.
