Özet

Türkiye’de hayvancılık sektörü içinde tavukçuluk sektörü en gelişmiş ve rekabet etme potansiyeli en yüksek olan sektördür. Son dönemlerde Türkiye’de kırmızı et sektöründe yaşanan fiyat artışları sektörün önemini daha da arttırmıştır. Ancak zaman zaman gündeme gelen hormon ve antibiyotik kullanımına ilişkin haberlerin kanatlı eti tüketimin olumsuz etkileyip etkilemediğini belirlemek amacıyla toplam 475 kişi ile yüz yüze anket çalışması yapılmıştır. Yapılan çalışmada Kars ilindeki tüketicilerin hormon ve antibiyotik kullanımına ilişkin çıkan haberler doğrultusunda %70’inin tavuk etini riskli olarak gördükleri ve özellikle gelir durumu yüksek olan tüketicilerin tüketimlerini önemli ölçüde azaltırken, gelir seviyesi düşük olanların fiyatın düşmesine bağlı olarak tüketimlerini arttıkları belirlenmiştir. Bu bakımdan Gıda Tarım ve Hayvancılık Bakanlığı ile birlikte sektör paydaşlarının tavuk etlerinin antibiyotik ve hormon kalıntısı yönünden yasal mevzuata uygun olduğuna yönelik bilgilerin düzenli olarak kamuoyu ile paylaşılmasının sektörün daha da büyümesi açısından önem olduğu düşünülmektedir.

Abstract

Within the livestock sector in Turkey, the poultry industry is the most advanced sector with the highest potential of competition. The recent price increases experienced in the red meat sector in Turkey has increased the importance of this sector. Within this context, face-to-face surveys were conducted with a total of 475 people to determine whether the news about hormone and antibiotic use from time to time adversely affected the poultry consumption. In the study conducted, it was observed that 70% of the consumers in Kars see the chicken meat as risky in the direction of the news about the usage of hormones and antibiotics. In addition, it has been determined that consumers with particularly high incomes significantly reduce the consumption of poultry meat, while those with low-income levels have increased their consumption due to falling prices. In this regard, along with the Ministry of Food, Agriculture and Livestock, it is thought that it is important for industry stakeholders to share information regularly with the public on the fact that chicken meat is in compliance with legal regulations in terms of antibiotic and hormone residues.
