Salmonella spp. ile kontamine edilen broiler bagetlerinin +4oC’de Muhafazasında sosun ve eugenolün bu patojen üzerine etkisi

Özet
Bu araştırmada; Salmonella suşları ile kontamine edilen broiler bagetlerinde sosun ve eugenolün Salmonella suşları üzerine antibakteriyel etkisi incelendi. Bu amaçla örnekler; kontamine ancak sos içermeyen (1. grup), kontamine ve soslu (2. grup), kontamine, soslu ve %0.3 eugenol (3. grup), kontamine, soslu ve %0.5 eugenol (4. grup) olacak şekilde 4 gruba ayrıldı. Daha sonra bagetler polietilen kapaklı kaplarda ambalajlanarak + 4 oC’de 5 gün muhafaza edilerek muhafazanın 0., 2., 3. ve 5. günlerinde Salmonella spp. varlığı yönünden incelendi. Muhafaza süresine bağlı olarak 1. ve 2. grupta hafif düzeyde azalmalar meydana gelirken diğer gruplarda artmalar saptandı. Muhafazanın 5. gününde 0.40 log10kob/g ile en fazla azalma 1. grupta bulunurken en az düşüş ise 0.19 log10kob/g ile 2. grupta görüldü. 3. ve 4. gruplarda ise Salmonella spp. sayısında hafif düzeyde artışlar belirlendi. Bu araştırmada broiler bagetlerine ilave edilen eugenolün farklı konsantrasyonları ile sosun Salmonella suşları üzerine önemli bir etkisinin olmadığı tespit edildi.
Abstract
In this study, it was investigated antibacterial effect of sauce and eugenolon broiler baguettes contaminated with Salmonella strains. Prepared for this purpose; contaminated but the sauce does not contain (group 1), contaminated and contain sauce (group 2), and contaminated-sauce and eugenol containing 0.3% (group 3), and contaminated-sauce and eugenol containing 0.5% (group 4) baguettes are packed in containers polyethylene cap +4°C were stored at 5 days. th nd rd Microbiologycal analyses in order to presence of Salmonella spp. were done at the 0 , 2 , 3 and th 5 days. The results of study 1 and 2 groups, depending on the storage period decreased slightly, depending on the storage period of the increased in the other groups were determined. Most of the th th storage period decreased on the day of 5 0.40 log10cfu/g and 1 group, the 5 of at least 0.19 log10 nd rd th decrease in cfu/g and 2 group, 3 and 4 groups established light level increased. In conclusion, it can be stated that sauce and different eugenole concentrations have not got a significant effect on the broiler baguettes contaminated with Salmonella strains.
