Özet

Bu çal ı ş mada, Elaz ı ğ il merkezinde satı lan 80 adet pi ş mi ş (40 adet et, 40 adet tavuk) dönerörneklerinin mikrobiyolojik kalitesi saptand ı . Pi ş mi ş et döner ve tavuk döner örneklerinde s ı ras ı ylaortalama olarak; toplam mezofilik aerob bakteri sayı s ı 4.98 ve 5.11 log 10kob/g, koliform bakteri 1.42ve 2.13 log 10kob/g, Enterobacteriaceae 3.92 ve 4.03 log 10kob/g, maya-küf sayı s ı 3.34 ve 4.05log 10kob/g, Staphylococcus-Micrococcus 3.71 ve 3.89 log 10kob/g, LactobacillusLeuconostoc Pediococcus (LLP) 4.13 ve 3.64 log 10kob/g ve E. coli sayı s ı ise 1.01 ve 2.19 log 10kob/g olarakbulundu. Örneklerin hiç birinde S. aureus veClostridium perfringens tespit edilemedi. Kı rk adet etdöner örne ğ inin 14ünde (%35) ve 40 tavuk döner örne ğ inin 18inde (%45) E. colinin 1.0 log 10kob/g ı n üzerinde oldu ğ u görüldü.Sonuç olarak mikrobiyolojik kriterler bakı m ı ndan ara ş tı rmas ı yap ı lan tavuk dönerlerin kalitesinin etdöner örneklerine göre daha dü ş ük oldu ğ u belirlendi. Dolay ı s ı yla bu çal ı ş ma ile, et ve et ürünlerininüretim ve tüketim a ş amaları nda gerekli hijyenik önlemlerin al ı nmas ı n ı n ve Hazards Analysis CriticControl Points (HACCP) gibi g ı da güvenli ğ i yönetim sistemlerinin uygulanmas ı n ı n son dereceönemli oldu ğ u vurgulanmaktad ı r.

Abstract

In this study, microbiological quality of 80 cooked doner (40 samples meat, 40 samples chicken) samples sold in Elazı ğ city center were investigated. The mean numbers of total mesophilic aerobicbacteria, coliform bacteria, Enterobacteriaceae, moulds-yeast, Staphylococcus- Micrococcus,LactobacillusLeuconostocPediococcus (LLP) and E. coli of cooked meat doner and chickendoner samples were 4.98 and 5.11, 1.42 and 2.13, 3.92 and 4.03, 3.34 and 4.05, 3.71 and 3.89,4.13 and 3.64, and 1.01 and 2.19 log 10cfu/g, respectively. No S. aureus and Cl. perfringens weredetected in the samples. The results showed that E. coli was detected above 1.0 log 10 cfu/g in 14out of 40 meat doner samples (35%) and 18 out of chicken doner samples (45%). As a result, quality of meat chicken doner products in terms of microbiological criteria were lowerthan that of the meat doner. Thus, applying necessary hygienic measures and implementation ofHazards Analysis Critic Control Points (HACCP) and food safety management systems duringproduction and consumption is extremely important.
