Özet

Bu araştırmada, Van, Siirt, Batman ve Diyarbakır illerinde tüketime sunulan otlu peynirlerinhistamin içerikleri, pH değerleri ve bazı mikrobiyolojik özellikleri incelendi. Bu illerden 10’ar adetotlu peynir örneği temin edilerek soğuk zincir altında mümkün olan en kısa sürede laboratuvaranalizine alındı. Örneklerdeki histamin miktarı ELISA yöntemi ile saptandı. Mikrobiyolojik olaraktoplam aerob bakteri, Enterobacteriaceae, Lactobacillus spp. ve maya-küf sayıları incelendi. Analizsonuçları otlu peynirlerin Van ili hariç diğer illerde ortalama olarak ≥3.0 log10 kob/gEnterobacteriaceae, ≥5.4 log10 kob/g maya-küf, ≥7.0 log10 kob/g Lactobacillus spp., ≥6.6 log10 kob/gtoplam aerob bakteri sayısına sahip olduğunu gösterdi. Abstract

In this study, histamine content, pH level and some microbiological characteristics of herby cheeses sold in Van, Siirt, Batman and Diyarbakır provinces were investigated. For this study, 10 herby cheese samples from each provinces were taken to the laboratory under cold chain and subjected to the analysis as soon as possible. Histamine levels in the cheese samples were detected by ELISA method. Total aerobic bacteria, Enterobacteriaceae, Lactobacillus spp. and yeast-mold counts were determined for microbiological characteristics. The results showed that herby cheeses except for those that obtained from Van province had ≥3.0 log10 CFU/g Enterobacteriaceae, ≥5.4 log10 CFU/g yeast-mold, ≥7.0 log10 CFU/g Lactobacillus spp., ≥6.6 log10 CFU/g total aerobic colony bacteria, as averagely.
