1 Methylcyclopropane uygulamalarının ve farklı depolama sıcaklıklarının fuji kiku elma çeşidinin meyve kalitesine etkileri

Özet

Çanakkale koşullarında 2012 2013 depolama döneminde yapılan bu çalışmada; yeni elma çeşitlerinden olan, üstün renk ve tat özellikleri ile öne çıkan Fuji Kiku elma çeşidinde hasat sonrası depolama periyodunda ticari anlamda yüksek oranda kullanılan 1 Methylcyclopropane (1 MCP) uygulamasının meyve kalite özellikleri üzerine etkileri incelenmiştir. Çalışmada Tekirdağ Banarlı bölgesinde üreticiye ait Fuji Kiku elma çeşidiyle kurulmuş bahçeden hasat edilen meyveler kullanılmıştır. Meyveler hasat edildikten hemen sonra Çanakkale‟ye getirilmiştir. Farklı derecelerde depolanacak şekilde iki ayrı gruba ayrılmışlardır. Her iki gruba ait meyvelerden bir kısmı kontrol olarak ayrılırken, diğer kısım meyvelere 625 ppb ve 1250 ppb dozlarında 1 Methylcyclopropane (1 MCP) uygulamaları gerçekleştirilmiştir. Uygulama yapılan ve yapılmayan meyveler 0oC ve 2oC sıcaklıkta %90 95 oransal nem koşullarında 180 gün süreyle muhafaza edilmişlerdir. Her iki depolama koşulunda da depolama dönemlerine (60, 120 ve 180 gün) ilaveten 7 gün süreyle raf ömrüne (18 22o C sıcaklık, %55 nem) tutulan meyvelerde; meyve eti sertliği (MES), suda çözünür kuru madde miktarı (SÇKM), titre edilebilir toplam asitlik (TETA), toplam fenolik bileşik miktarı, meyve eti kararması ve fungal etmenli iç kararma oranı gibi kalite özellikleri değerlendirilmiştir. Sonuç olarak; 1 MCP uygulaması ile farklı sıcaklıklarda yapılan depolamayla olası enerji tasarrufu olanakla rı incelenmiştir. Yüksek sıcaklık koşullarında depolamayla, kalite kaybının olmadığı tespit edilmiştir. Ticari anlamda uygulanabilir olacak bu uygulamayla, ülkemiz için enerji tasarrufuna katkı da sağlanabilecektir.

Abstract

In this research, we studied the effects of one Methylcyclopropane (1 MCP) applicationused verycommonly as part of post harvest physiology and commercial storage period on the quality characteristics ofthe Fuji Kiku apples. Fuji Kiku apples are one of the most recent apple types with their superior color and taste.A study is conducted using ha rvests of the Fuji Kiku apple trees of a local producer in Tekirdağ Banarlı. 'FujiKiku' apples were transported to Dardanelles immediately after harvest. 1 Methylcyclopropene was applied toapple fruits at two different doses; one group of fruits was stor ed at 0°C temperature and 90 95% relativehumidity, and the other group of fruits was stored at 2°C temperature and 90%95% relative humidityconditions for 60, 120 and 180 days. At the end of each storage period, both groups of apples were subjected tos helf life at a temperature of 18°C to 22°C for 7 days. Fruit quality characteristics such as fruit firmness (MES),the value of soluble solids (TSS), total titratable acidity (TETA), the total amount of phenolic compounds, fruitflesh darkening and fungal decay agent rate of fruit quality are evaluated. 1MCP applications had a positiveeffect on the quality of apples at both storage temperatures. It has been identified that storing at high temperature conditions resulted in no loss of quality in the apple s. Results of this study can be applied incommercial terms, enabling energy conservation for our country.
