Özet

Bu çalısmada, Afyonkarahisar il merkezinde bulunan semt pazarlarından satın alınan 100 adet beyaz peynir örneginde Listeria monocytogenes ile Salmonella spp.’nin varlıgı ve yaygınlıgı arastırılmıstır. L. monocytogenes’in izolasyon ve identifikasyonunda Amerikan Gıda ve İlaç Dairesi’nin (Food and Drug Administiration/FDA), Salmonella spp.’nin izolasyon ve identifikasyonunda ise Uluslararası Standart Ofisi’nin (International Standart Office/ISO) önerdigi metotlar kullanılmıstır. Analize alınan 100 adet peynir örneginden %6’sında (6/100) L. monocytogenes ve % 2’sinde (2/100) Salmonella spp. tespit edilmistir. Arastırma sonuçları, Afyonkarahisar’da tüketime sunulan beyaz peynirlerin L. monocytogenes ile Salmonella spp. ile bulasmada kaynak olabilecegini ve halk saglıgı açısından potansiyel bir tehdit olusturabilecegini ortaya koymustur.

Abstract

The purpose of this study was to investigate the presence and prevalance of L. monocytogenes and Salmonella spp. in 100 white cheese samples bought from the neighborhood and village markets in Afyonkarahisar province center. The methods recommended by the American Food and Drug Administration (FDA) were used in the isolation and identification of L. monocytogenes, while International Standard Office (ISO) recommended methods were used to isolate and identify Salmonella spp. Out of the 100 cheese samples taken for analysis, 6% (6/100) were identified as L. monocytogenes and 2% (2/100) were identified as Salmonella spp. The results of the research show that the white cheeses placed on the market for consumption in Afyonkarahisar may be a source of contamination with L. monocytogenes and Salmonella spp. and thus present a potential hazard for public health.
