Abstract
This study was carried out to determine the essential oil contents and the essential oil components of sweet fennel growing naturally in Atabey County, Isparta-Turkey. Essential oil contents and components in the parts of plants differed during the growth and development stages. The highest essential oil content was found (4.95 %) in the seeds at early maturing stage. After this stage, essential oil content of the seeds gradually decreased to 2.32% at the maturity stage. There was no important change in the essential oil content of the stems (0.08-0.17 %). The essential oil content of leaves increased from shooting stage (0.15%) to flowering stage (0.58 %). The main component of essential oil was trans-anethole (18.93-76.00 %), and other important components were fenchone, estragol and anisaldehide. α-pinene, myrcene, limonene, cineole, γ-terpinene, citronellol and camphor were present in low levels in sweet fennel oil. Trans-anethole content of the whole plant increased during the vegetative growth and trans-anethole content of the seeds reached the highest amount at the yellow-maturity stage (76.00 %).
