Tuzlanmış ve potasyum sorbat uygulanmış alabalık (Oncorhynchus mykiss w.) filetolarının raf ömrü ile sorbat kalıntılarının incelenmesi

Özet
Bu araştırmada, tuzlanmış ve potasyum sorbat uygulanmış alabalık filetolarının üretimi ve muhafazası sırasında meydana gelen kimyasal, mikrobiyolojik ve duyusal değişimler incelendi. Bu amaçla; filetolara %10 ve %15 (w/w) NaCI ile %1, %5 ve %10 oranlarında (w/v) potasyum sorbat uygulandı. Fileto örnekleri polietilen torbalara vakumlanarak ambalajlandı ve +4°C'de muhafaza edildi. Örnekler üretimin belli aşamalarında (fileto, tuzlama ve kurutma sonu) ve muhafazanın 7., 14., 28., 42., 56., 70. ve 84. günlerinde kimyasal (pH, rutubet, tuz, TVB-N, TBA sayısı ve sorbikasit miktarları) ve mikrobiyolojik (toplam mezofilik aerob, maya ve küf sayısı) yönden analiz edildi. Ayrıca, örnekler 8 kişilik panelist grup tarafından muhafazanın 7., 14., 28., 42., 56. ve 70. günlerinde duyusal açıdan incelendi. Çalışmada, yapımda kullanılan tuz miktarının artması ile birlikte potasyum soıfcatın antimikrobiyel etkisinin arttığı; dolayısıyla tuz ile potasyum sorbat arasında sinerjistik bir etkinin mevcut olduğu belirlendi. Üretim şekline bağlı olarak elde edilen ürünün kimyasal kalitesinin oldukça iyi olduğu gözlemlendi. Ayrıca potasyum sorbatın farklı konsantrasyonlarda uygulanmasıyla üründeki sorbik asit miktarlarının farklı düzeylerde bulunduğu, ancak bu miktarların normal tüketimde sağlık açısından risk taşımadığı tespit edildi. Yapılan duyusal analiz sonuçlarına göre, potasyum sorbat uygulanan örneklerin tüketilebilir niteliklerinin potasyum sorbat uygulanmayan örneklere göre daha iyi olduğu görüldü. Sonuç olarak bildirilen şekilde teknolojik işleme tabi tutulan alabalık filetolarının uygun muhafaza koşullarında en az 70 gün bozulmadan saklanabileceği belirlendi.
Abstract
In this study, chemical, microbiological and sensorial changes during processing and storage of potassium sorbate treated salt-cured trout fillets were investigated. For this purpose; %10 and %15 ratios NaCI and %1, %5 and %10 ratios potassium sorbate were treated to the fillets. The processed fillet samples were vacuum-packaged in polyethylene bags and storaged at 4 C° The samples were analyzed physicochemically (pH, moisture, salt, TVB-N, number of TBA and sorbic acid amounts) and microbiologically (mesopbile aerob bacteri, yeast and mould countings) in some periods of production (fillet, end of salting and drying) and in the storage days of 7,14, 28, 42, 56, 70 and 84. In addition, 8 panellists evaluated the samples for sensory attributes on days 7,14, 28, 42, 56 and 70 during storage. In study, the antimicrobial effect of potassium sorbate was increased by increasing salt level during processing; thus, a synergistic effect was observed between salt and potassium sorbate. The chemical quality was found to be better depending on processing types. When potassium sorbate treated in different concentrations, the sorbic acid amounts in the product were found in different levels. However, this amounts had no health risk for normal human consumption. Sensorial analyzes showed that the consumable properties of potassium sorbate treated samples was better than no potassium sorbate treated samples minimum 70 days. It could be come into conclusion that trout fillet treated with described technological process in this study could be kept without spoilage under suitable storage conditions for at least 70 days.
