Özet
Pastırma kendine has üretim teknolojisiyle asırlardan beri üretilen Türklere özgü kurutulmuş bir et ürünüdür. Pastırma üretim teknolojisini geliştirmek amacıyla bir çok çalışma yapılmıştır. Bu derlemede, pastırma ve üretim teknolojisini geliştirmeye yönelik çalışmalar hakkında bilgi verilmiştir.
Abstract
Pastrami is a special meat product produced by Turks for ages. Several experimental studies have been conducted to improve pastrami-processing technology. The aim of this review presented here is to sumarrise the scientific works conducted to improve pastrami and its processing technology.
