Özet
Bu çalışma, buzdolabında bekletilen ıspanak (Spinacia oleracea L.), marul (Lactuca sativa L.) ve maydanozun (Pefroselinutn hortense L.) nitrat (NO3) ve nitrit (NO2) içeriklerindeki değişim seyrinin belirlenmesi amacıyla yapılmıştır. Bu amaçla Konya semt pazarlarında satılan söz konusu sebzeler yaz (Haziran, Temmuz, Ağustos) ve kış aylarında (Aralık, Ocak, Şubat) birer kez örneklenerek laboratuvara getirilmiş ve buzdolabında bekletilerek 0, 3,6 ve 9. günlerde nitrat ile nitrit içerikleri kadmiyum asetat kolonu metodu ile belirîsnmiştir. Araştırma sonuçlanıra göre, nitrat ve nitrit içerikleri üzerine örnekleme ayı, buzdolabında bekletme süresi ve sebze çeşitlerinin etkisi istatistiksel olarak % l seviyesinde önemli çıkmıştır. Kış aylarında örneklenen sebzelerin nitrat içerikleri yaz aylarında örneklenenlerinkinden daha yüksek bulunmuştur. Buzdolabında bekletme süresi arttıkça üç sebze çeşidinde de nitrat içerikleri azalırken ıdtrit içerikleri artmıştır. En yüksek nitrat içerikleri (351.65 ve 355.56 mg/kg) ıspanak ve mottdda, en yüksek aitrit içeriği (5.90 mg/kg) ise ıspanakta belirlenmiştir
Abstract
In this study, the variations in nitrate (NO3) and nitrite (NO2) contents of spinach (Spinacia oleracea L.), lettuce (Lactuca sativa L.) and parsley (Petroselinum hortense L.) plant samples kept in refrigerator, were determined. For this purpose, the plant samples sold in bazaars of Konya City were collected in Summer months (June, July, August) and in Winter months (December, January, February). The vegetable samples were kept in the refrigerator, in laboratory and than nitrate and nitrite contents of the vegetable samples were determined on 0, 3, 6 and 9th days of keeping by the cadmium acetate colon method. According to the results, sampling month, keeping time in the refrigerator and vegetable kind affected significantly the nitrate and nitrite contents at 1 % level, statistically. It was found that, the nitrate contents of the vegetables collected in winter months were higher than those collected in Summer months'. The nitrate contents decreased but nitrite contents increased in the three vegetable samples, with the increasing of keeping time of them hi the refrigerator. The highest nitrate contents (351.65 and 355.56 mg/kg) were determined in the spinach and lettuce plant samples whereas if the highest nitrite content (5.90 mg/kg) was determined in spinach
