Türkiye Denizlerinde Avlanan Barbun Balıklarının Besinsel İçerik Yönünden Karşılaştırılması

Özet

Bu çalışmada, ülkemiz denizlerinde avcılığı yapılan barbun balıkarının besinsel içeriği ile ilgili çalışmalar incelenmiş ve elde edilen besin değerlerinin karşılaştırmaları yapılmıştır.

Abstract

The studies related to mullet fish which are fishing in our country’s seas were reviewed in terms of nutritional content and these data are summarized in this study. Four mullet species are fishing in our country’s seas. These are red mullet (Mullus barbatus), surmullet (Mullus surmuletus), goldband goatfish (Upeneus moluccensis) and por’s goatfish (Upeneus pori). Mullet fish is very rich in protein content, essential amino acids and fatty acids. Knowledge of nutritional content of food and its seasonal variation are important for a balanced diet. In this respect, the studies are not at a sufficient level and continuation of this kind of studies will be beneficial.
