Antalya’da bulunan turizm konaklama tesislerindeki gıdaların mikrobiyolojik kalitesinin incelenmesi

Özet
Çalışma Antalya’da bulunan turizm konaklama tesislerinden alınan gıda numunelerinin mikrobiyolojik kalitesinin incelenmesi ve sonuçların değerlendirilmesi amacı ile yapılmıştır. Bu amaçla araştırma kapsamında Antalya’da bulunan 15 turizm konaklama tesisinde, müşterilerin tüketimine sunulan 1350 gıdanın mikrobiyolojik analizi yapılmıştır. Araştırmada, numuneler Türk Gıda Kodeksi Mikrobiyolojik Kriterler Yönetmeliği Ek-1’e göre; Escherichia coli, Salmonella spp., Listeria monocytogenes, Koliform, Koagulaz pozitif stafilokoklar, E.coli O157:H7, Bacillus cereus ve Maya-Küf, yönünden incelenmiştir. Gıdaların ürün gruplarına göre; 2 adedinde (% 1.36 ) B. cereus, 173 adedinde (% 27.86) E. coli, 27 adedinde (% 23.28) E. coli (EMS), 2 adedinde (% 16.64) E. coli O157, 34 adedinde (% 17.65) koliform bakterilere, 39 adedinde (% 23,78) Koagulaz pozitif stafilokok, 44 adedinde (% 36.36) küf, 33 adedinde (% 27.27) maya, 1 adedinde (% 11.11) Salmonella spp. saptanmıştır. Numunelerde Listeria monocytogenes’ e hiç rastlanmamıştır. Araştırmada, 1350 gıda numunesinin 237’si Türk Gıda Kodeksi Mikrobiyolojik Kriterler Yönetmeliği Ek-1’de belirtilen limit değerlerin üstünde; 71 adedi ise limit değerler arasında saptanmıştır. Sonuç olarak, analize alınan numunelerde limitlerin arasında ve üzerinde olan örnekler tüketim açısından risk teşkil etmektedir. Bu yüzden turizm konaklama tesislerinde gıdaların daha güvenilir ve hijyenik olabilmesi için gerekli düzeltici ve önleyici faaliyetlerin yapılması gerekmektedir.
Abstract
The study was carried out with the aim of examining the microbiological quality of food samples taken from tourism accommodation facilities in Antalya and evaluating the results. For this purpose, microbiological analysis of 1350 foods served to the consumers from 15 tourism accommodation facilities located in Antalya was conducted. According to Annex-1 of the Regulation on Microbiological Criteria of Turkish Food Codex; Escherichia coli, Salmonella spp., Listeria monocytogenes, Yeast-Mold, Coliform, Coagulase positive staphylococci, E. coli O157:H7, Bacillus cereus bacteria. According to the product groups of the foods; B. cereus in 2 (1.36%), E. coli in 173 (27.86%), E. coli (EMS) in 27 (23.28%), E. coli O157 in 2 (16.64%), coliform bacteria in 34 (17.65%), Coagulase positive staphylococci in 39 (23.78%), mold in 44 (36.36%), yeast in 33 (27.27%), Salmonella spp. in 1 (11.11%) was found. Listeria monocytogenes was not found in any of the sample. In the survey, 237 of the 1350 food samples were above the limits specified in the Turkish Food Codex Microbiological Criteria Regulation Annex-1; 71 limit values were determined. As a result, samples that are between and above the limits of the samples pose a risk to human consumption. Therefore, it is necessary to make necessary corrective and preventive activities in order to make food more safe and hygienic in tourism accommodation facilities.
