Yiyecek içecek işletmelerinde uygulanan maliyet kontrol sistemlerinin tespitine yönelik bir araştirma: gaziantep örneği

Yiyecek içecek sektörü içerisinde maliyet kontrolünün etkinliği, işletmenin sürekliliği
açısından önemli bir yere sahiptir. Maliyet kontrolünün doğru sistemler ile gerçekleştirilmesi, işletmelerin yiyecek içeceklerde açık vermesini engelleyeceğinden, dolayısıyla işletmelerin elde edecekleri karı arttıracağından önem arz etmektedir. Bu çalışmanın temel amacı; Gaziantep’te bulunan turizm işletme belgeli yiyecek içecek işletmelerinde uygulanan maliyet kontrol yöntemlerini tespit ederek; işletmelerin maliyet kontrolü ile ilgili mevcut durumlarını saptamaktır. Bu amaç doğrultusunda Güneydoğunun en büyük ili olan Gaziantep’te bulunan turizm işletme belgeli yiyecek içecek işletmelerinden yüz yüze görüşme tekniği kullanılarak, anket verileri elde edilmiştir. Elde edilen anket verileri kullanılarak, frekans dağılımları incelenmiştir. Bu sonuçlara göre; araştırmaya katılan işletme sahipleri ve yöneticilerinin genellikle işletmelerinde ayrıntılı maliyet kontrol sistemini uyguladıkları saptanmıştır.

Effectiveness of cost control has an important role in food and beverage sector in terms of durability of the organizations. Implementing of cost control with correct systems has an importance because of preventing deficit of food and beverage so that increasing profits that will be gained in the organizations. The main objective of this study is to detect cost control methods applied in the food and beverage organizations in Gaziantep that have tourism establishment license, and to determine current situation related to cost control of these organizations. In accordance with this purpose, survey data were obtained by using faceto-face method from licensed food and beverage organizations settled in Gaziantep which is the biggest city of the southeastern. Frequency distributions of obtained survey data were analyzed. The results indicated that owners and managers of the organizations who participated to this research applies detailed cost control systems in their organizations.
